The Heat Is On
To preheat or not to preheat? As it nears time to cook some turkey, pumpkin pie, and other holiday delights, make sure you maximize the use of your oven. Depending upon what you're cooking up, you may not need to preheat the oven. In fact, in some cases, you can save up to half a pound of carbon by not preheating. And you can even turn off the oven before your cooking time is up, since the heat already inside the oven can finish cooking your tasty treats. And, try not to open the door while cooking (which allows a lot of heat to escape).

You can also reuse blanching water, or pasta water. The starches in pasta water (and blanching water if you blanch potatoes) is a great way to thicken or bind a sauce. Its also flavorful and can be used again. The cloudiness is starch and salt. Its safe to eat and it can really add flavor.
