By now, you’re giving some holiday recipes a test run to make sure everything’s tastily prepared when the relatives come knocking. Whether you’re testing out a new concoction for the holidays or crafting your time-honored dish from scratch for tonight’s meal, make twice as much as you normally do. Then, freeze your leftovers to quickly heat up when you’re in a bind (or just when you’re hungry). Zapping it all in a microwave will save energy, especially since you won’t have to heat up the oven and wash all those prep dishes in order to make that yummy casserole.
